<p class="has-text-color has-black-color">La Victoria sponge cake, chiamata anche &#8220;Victoria sandwich&#8221;, deve il suo nome alla regina Vittoria che amava accompagnare il tè delle cinque con qualcosa di dolce. E&#8217; composta da due dischi di morbido pan di spagna intervallati da crema al formaggio e uno strato di confettura ai lamponi. Vi è già venuta l&#8217;acquolina in bocca?</p>



<p class="has-text-color has-black-color"><em>Ingredienti (per due tortiere da 22 cm)</em></p>



<p class="has-text-color has-black-color">200 gr di farina</p>



<p class="has-text-color has-black-color">4 uova</p>



<p class="has-text-color has-black-color">un pizzico di sale</p>



<p class="has-text-color has-black-color">200 gr di burro ammorbidito</p>



<p class="has-text-color has-black-color">50 ml di latte intero</p>



<p class="has-text-color has-black-color">estratto di vaniglia</p>



<p class="has-text-color has-black-color">200 gr di zucchero semolato</p>



<p class="has-text-color has-black-color">8 gr di lievito per dolci</p>



<p class="has-text-color has-black-color">250 gr di formaggio spalmabile</p>



<p class="has-text-color has-black-color">250 gr di mascarpone</p>



<p class="has-text-color has-black-color">30 gr di zucchero a velo</p>



<p class="has-text-color has-black-color">120 gr di lamponi</p>



<p class="has-text-color has-black-color">300 gr di confettura di lamponi</p>



<p class="has-text-color has-black-color">zucchero a velo per decorare</p>



<p class="has-text-color has-black-color">Sbattere con le fruste elettriche il burro ammorbidito, lo zucchero semolato e la vaniglia. Aggiungere le uova, uno alla volta. Aggiungere farina, lievito e sale, intervallando con il latte. Dividere l&#8217;impasto in due parti uguali e mettere in due stampi da 22 cm imburrati ed infarinati.  Infornare in forno preriscaldato a 180 C° per 20 minuti circa, fare la prova stecchino per sicurezza. Per la crema al formaggio unire il mascarpone e il formaggio spalmabile, poi aggiungere lo zucchero a velo setacciato e mescolare. Una volta che i dischi di pan di spagna si sono raffreddati mettere la crema al formaggio su di un disco, mettere anche la confettura ai lamponi e i lamponi. Chiudere con l&#8217;altro disco e cospargere con lo zucchero a velo!</p>
